    Broccoli Salad Serves 4

    1 bunch broccoli (cut into florets)
    2 bunches green onions (diced)
    1 cup non-fat mayonnaise
    2 tablespoons red wine vinegar
    1 tablespoon sugar substitute
    ΒΌ teaspoon each, salt and pepper
    8 oz. crumbled Feta cheese
    12-15 black olives (cut in half)
    Bibb or romaine lettuce

    • Wash and prepare broccoli and green onions. Set aside.
    • Mix together mayonnaise, red wine vinegar, sugar, salt and pepper.
    • Pour over vegetables.
    • Add Feta cheese and olives.
    • Toss well and place in refrigerator for 2-4 hours.
    Serve on lettuce leaves on chilled plates.

    My son loves this one. He spotted it on the back of a bottle of salsa.

    4 boneless skinless chicken breast halves
    2/3 cup salsa
    1 tbsp prepared mustard
    3 tbsp brown sugar
    Preheat oven to 350 degrees. Stir together salsa, mustard, and brown sugar. Place chicken breasts in glass baking dish. Pour salsa mixture over chicken & bake for 25 minutes.

    They all sound good. Thanks for the reference on the cookbook. I didntknow about it.

    But my favorite breakfast (usaully when hungover) is to mix Scrambled Eggs and Spinach together, cut up tomato, grate cheddar cheese, add garlic, parsley, and parmesan cheese and if you have any pieces of chicken. Mix it all up.

    You are superwoman If you can eat all that with a hangover.

    My favorite thing to make is....reservations. (rim-shot, please)

    OK, here's something I can make at home:

    FROZEN PIZZA.

    1. Open freezer door.

    2. Locate and remove that 10-inch disc with a picture of a pizza on it.

    3. Preheat the oven to 425 degrees.

    4. Insert pizza in the oven and wait 10 to 12 minutes, or until the cheese has melted.

    5. Remove pizza carefully.

    6. Using a clean pizza-cutter, slice pizza into 8 sections of approximately the same size.

    7. Take a slice and enjoy with your favorite beverage.

    Mock Mashed Potatoes

    1 head of cauliflower

    1/2 pack of cream cheese

    ---------------------

    Boil the cauliflower in water and some milk (milk for sweetness). When its done, drain it all. Use a hand mixer or food processor and your block of cream cheese and whip it up.

    Add salt and pepper and some butter................mmmm good and no carbs! You can add some cheddar cheese or parmesan for some different flavors. But you need the cream cheese to help make it seem like mashed potatoes.

    Here's a great BBQ chicken recipe--from Pakistan. It's called "Chicken Tikka".

    1 T minced garlic (I cheat and use bottled garlic)
    1 T finely chopped ginger (yeah, I cheat here too and use pre-minced ginger from a tube... )
    1 T vinegar
    1 T lemon juice
    3 T olive oil
    1 T paprika
    1/2 T chili powder
    1/8 t cayenne pepper

    Mix, and then marinate your cut-up chicken in this (pierce the chicken first) for at least 30 minutes. (4 hours is ideal.) Then BBQ it, or fry it in an iron skillet indoors. It's really zippy and tender, and my kids love it, too.

    This is what I make when I don't feel like cooking much.

    Cooked spaghetti

    A tin of clams

    A handful of parsley cut up

    A handful of fresh basil leaves cut up

    A dash of white wine

    As many garlic cloves as you think you can stand, crushed

    Sautee the garlic cloves in plenty of olive oil to take the edge off, then throw in everything else and sautee for a minute or two. Then mix it up with the spaghetti, and throw some pine nuts on top. (I think pine nuts are called pignon nuts in the US, but I'm not sure.) Salt to bring the flavours up.
