Hey Stephanie you like pork chops? This is my favorite pork chop recipe: (for two)

2 Center cut bone in thick chops

    1/4 cup flour

    4 cloves garlic, finely minced

1 medium bell pepper (any color you like)

1\2 cup sweet roasted bell pepper (the kind that comes brined in a jar) chopped

1\2 cup hot cherry pepper, chopped (this can also be the jar kind)

    1\4 cup white cooking wine

1\4 cup fresh squeezed lemon juice

heat olive oil in deep skillet. dip chops in flour to coat both sides, shaking off any excess. place chops in skillet, cook thoroughly on both sides (about 15-20 minutes per side) season w/salt & pepper.

Remove chops from skillet, and add chopped peppers with minced garlic. cook until tender, about 3-5 minutes. Add white wine with lemon juice. let simmer for 5-10 minutes. serve with chops.

This is one of my family's favorites!!! Very easy, and very inexpensive to make!

    California Style Black Bean Soup

1 lb. black beans, soaked overnight in water

6 cans 15-1/2 oz. chicken broth

4 links mild italian sausage, cooked and drained

    1 small onion, diced

1/4 c. fresh chopped cilantro, stems removed

    4 cloves minced garlic

    1 T. oregano

    salt and pepper to taste

    2 c. plain non-fat yogurt

    juice from 2 lemons

    Additional chopped cilantro (if desired)

Rinse and pick through beans and soak overnight. The next morning, remove casing from italian sausage links and fry in a separate saucepan over medium heat until cooked through. Drain fat and cut into very small pieces. Set aside. In large pot, add drained beans and all ingredients except yogurt and lemon juice, and bring to a rolling boil. Reduce heat and cover. Simmer until beans are tender - usually three to four hours. Remove from heat, uncover, and allow to cool. Add yogurt and lemon juice to cooled mixture and mix together. Return to burner over low heat, and slowly heat until warm. Serve in bowl topped with fresh chopped cilantro.

    2/3 cup finely chopped scallion

    1/2 teaspoon dried thyme, crumbled
    11/2 teaspoons salt
    1 1/2 teaspoons ground allspice
    1/4 teaspoon freshly grated nutmeg
    1/2 teaspoon cinnamon
1/2 cup minced pickled jalapeno pepper, or to taste
    1 teaspoon black pepper
6 drops hot sauce or to taste
    2 tablespoons soy sauce
    1/4 cup vegetable oil
18 chicken wings (about 3 1/4),pounds, the wing tips cut off and reserved for another use

Marinade: In a food processor or blender puree the onion, the scallion, the garlic, the thyme, the salt, the allspice, the nutmeg, the cinnamon, the jalapeno, the black pepper, the hot sauce, the soy sauce and the oil.

In a large shallow dish arrange the wings in 1 layer and spoon the marinade over them, rubbing it in. Let the wings marinate, covered and chilled, turning them once, for at least 1 hour or, preferably, overnight.

*You can cook these in the oven @ 450 degrees, but they are far better on the grill!*

Crack open a Red Stripe, put Marley on the CD Player, and chow on some wings and you'll swear you are in Jamaica
