    I'm Heeeeeeuuuuuuuge italian fan....

    Beef Parmagiano

    2 lbs. Cubed steak (stew meat)

    1 cup parmesian cheese

    1 cup flour

    1 cup bread crumbs

    1 tsp of basil, oregano, black pepper

    1/4 cup Extra Virgin Olive Oil

    1 bunch green onion

    about 1 cup chopped baby spinach

    2 tbs of minced Garlic

    1/4 cup Parsley (if dry)

    2 plate's worth of angel hair pasta

    4 cups marinara sauce (however you or Paul Newman make it)

    I. pour half of the Garlic and EVOO into skillet and heat on medium high. warm Oven to 325 (F)

    II. mix cheese, flour, crumbs and spices and coat beef.

    III. quick-sear the beef in skillet.

    IV. after beef is browned on both sides, place into casserole pan.

    V. Cover with spinach, 1/2 of the onion, Marinara, and then rest of onion. place in oven.

    VI. Wait 20 minutes (read, post, watch baseball)

    VII. Boil water and pasta. Drain just before it becomes al dente

    VIII. saute pasta for 90 secs in pan with EVOO and rest of garlic and parsley.

    IX. place on 4 plates and serve with bread.

    X. Make them clean up.

    For me the clams are essential because I love clams. But I think small chicken chunks would do about the same thing, unless you're veggie, then I don't know what to suggest, maybe deep fried tofu?. Just something chewy to go with the slippery noodles and crunchy pine nuts.

    Italian meatballs

    1 pound of ground veal, pork, beef

    Take three slices of Italian bread soak them in milk mix well with the ground meats, a little italian seasonings and make the meatballs in the palm of you hands, and roast them in the oven in a pan. Then make the pasta and sauce how you like.

    throw steak on grill.....wait 5 minutes.....flip steak.....wait 3 minutes....take off grill and eat

    Here is a wonderful Guacamole recipe:

    Guacamole Dip

    • 1/4 cup lemon juice
    • 1 medium 3 large, ripe avocados
    • onion, chopped 1/4 inch
    • 4 to 6 cloves of garlic, minced
    • 1/4 cup olive oil
    • 1 Tbsp. (or more) hot sauce
    • 1 tsp. salt
    • 1/2 tsp. freshly ground (coarse) black pepper
    • 2 Tbsp. (or more) sliced jalapeno peppers
    • 1/2 cup coarsely chopped tomato

    With a sharp knife, slice the avocados lengthwise to the pit, all around. With a twisting motion, separate the halves.

    By spoon, remove the flesh from each of the avocado halves to a mixing bowl. Add the lemon juice and mash the flesh with a fork, mixing well with the lemon juice to avoid darkening. Add the onion, garlic, olive oil, hot sauce, and salt and pepper and blend well by fork. Stir in the jalopenos and tomatoes, cover, and chill.

    Serve with unsalted tortilla chips, or fresh veggies.

    9 Cups of Water

    1 cup of Sugar

    1 12 oz Frozen Orange/Strawberry Banana Concentrate

    1 12 oz Frozen Pineapple Concentrate

    2 Cups Rum (or Vodka)

    Bring water and Sugar to boil to dissolve sugar

    add Frozen Concentrates and Rum.. Stir..

    Freeze 24 hours in Plastic Container (Ice Cream Pails will work) I like to stir every couple of hours..

    Serve in glasses...

    to get a little extra fiz.. pour a small amount of Sprite or 7Up to make it a spritzer..

    Did this last night on my grill..

    2 bunches asparagus

    2 red bell peppers chopped

    1 package mushrooms sliced (any kind will work great)

    1 package cooked spinach fettucine

    2 jars alfredo sauce or make your own

    1 lb large scallops

    lemmon juice

    Mrs Dash

    Combine all veggies in a bowl with olive oil and sea salt & pepper...in another bowl add scallops and enough lemon juice + olive oil to cover lightly, spinkle on Mrs Dash and let sit in fridge till ready to grill.

    Grill all veggies until the asparagus is soft enough to eat...the other veggies will do well for that duration as long as you cook on low heat. remove when done and grill scallops on low heat until firm and have decent grill marks. About 7 or 8 minutes usually.

    While the scallops are grilling one suggestion is to chop up your asparagus and add it and the rest of the veggies to the alfredo sauce..

    Serve w/ pasta & hot bread..viola'!
