The 144,000 is the Israelite remnant that are saved, also known as "the firstfruits unto God and to the Lamb."

And I heard the number of them which were sealed: and there were sealed an HUNDRED AND FORTY AND FOUR THOUSAND of ALL THE TRIBES OF THE CHILDREN OF ISRAEL. (Revelation 7:4)

And I looked, and, lo, a Lamb stood on the mount Sion, and with him an HUNDRED FORTY AND FORTY THOUSAND, having his Father's name written in their foreheads. And I heard a voice from heaven, as the voice of many waters, and as the voice of a great thunder: and I heard the voice of harpers harping with their harps: And they sung as it were a new song before the throne, and before the four beasts, and the elders: and no man could learn that song but the HUNDRED AND FORTY AND FOUR THOUSAND, which were redeemed from the earth. These are they which were not defiled with women; for they are virgins. These are they which follow the Lamb whithersoever he goeth. These were redeemed from among men, being THE FIRSTFRUITS unto God and to the Lamb. (Revelation 14:1-4)

These are the Israelites/Jews that entered the New Covenant first.

For I am not ashamed of the gospel of Christ: for it is the power of God unto salvation to every one that believeth; to THE JEW FIRST, and also to the Greek. (Romans 1:16)

There is more than 144,000 Israelites that will be saved. No one can count the number of Gentiles that are saved in Revelation chapter 7.

After this I beheld, and, lo, A GREAT MULTITUDE, WHICH NO MAN COULD NUMBER, OF ALL NATIONS, AND KINDREDS, AND PEOPLE, AND TONGUES, stood before the throne, and before the Lamb, clothed with white robes, and palms in their hands; (Revelation 7:9)

Most scholars seem to agree that the 144 000 Israelites refer to spiritual Israelites rather than literal ones. Even gentile Christians are known as Israelites in the spiritual sense.
