    Damn it. I didn't eat lunch today and PS is one of my favorite side dishes. Looks like Jourles is gonna hit the store on the way home to help compliment the brats(wurst) he has waiting. Potato salad and brats -- not quite the combination to eat just before going off to play volleyball.

    I cook alot and have to give you a "secret" except that it won't be a secret anymore once I tell you but it is only between you and me.

    The trick is, if in doubt, go to the grocery store and buy most of it already made.

    Then, buy maybe a red potato or two and cook them until tender. After they cool, chop them about the same size as the ones already in the salad. Then, simply browse the recipes others have put here and add a little bit of this or that to give it your "signature." Extra mayo, a bit of mustard and some oregano and thyme would be my first thought. A bit of purple onion sliced very thin will also give it a little more flavor. A hard boiled egg or two give it the homemade touch.

    You will be surprised how "homemade" you can make things taste by just adding to things you buy from the store.

    This is a favorite recipe of mine for potato salad:

    Old-fashioned Potato Salad

    9 cups cubed unpeeled round red potato (about 3 lbs.)
    1/2 c. diced onion
    1/2c. diced celery
    1/4 c. sweet pickle relish
    6 hard-cooked egg whites
    1 clove garlic, minced
    3/4 c. sour cream
    1/3 c. mayonnaise
    2 TBS. chopped fresh parsley
    1 tsp. dry mustard
    3/4 tsp. salt
    1/4 tsp. pepper
    ½ lb crispy cooked crumbled bacon

    Place potato in a large pot, cover with water, and bring to boil.
    Cook about 8 minutes or until tender.
    Drain; place in bowl with next 4 ingredients; toss gently.
    Combine sour cream and next 5 ingredients; stir well. Pour over potato mixture;
    toss to coat. If too dry add more mayo and season to taste.
    Cover and chill.

    When serving it's a nice presentation to top with sliced hard boiled eggs (1 or 2) and sprinkle with paprika.

    Yield 9 servings. Serving size 1 cup.

    I forgot the most important part. When you cook the potatoes, don't cut or peel them untill after they are done and have cooled. This keeps it from becoming mashed potatoe salad from stiring in the ingredients.

    Throw some sour cream in as well as mayo and it is really yummy.

    You've probably made the potato salad by now, but my husband likes to make it with sour cream, capers, and (carefully drained) sauerkraut. He also uses Plochman's mustard - it's stoneground with a little horseradish in it.

    I think Brooke wants to prepare a potato salad that is tasty but easy to make. Buying things from the supermarket is not so good because it's commercialised they try to cut corners and use cheaper ingredients.

    The best one is cubed boiled potatoes with mayo and eggs and perhaps a little chopped parsley and onion.
