if you pre boil potatoes in advance you can deep fry them in a chip fryer a few minutes before serve up for very crispy roast potatoes,
if you rough them up a little and shake them in a bit of salt flour and mustard powder (optional) it'll bump the crispy coating. pre cooked parsnips crisp up quite well in a fryer too.
