Because Jesus, being now a Zombie, was probably covered with radiation (that brought him back to life), and he didn't want 2-headed apostles trying to preach the Word to the horror-stricken, fleeing crowds.

The semantic range of haptomai (middle voice) does correspond very often with "touch," but in that particular case I think the NWT does offer a pretty good translation ("stop clinging to me," cf. NRSV "do not hold on to me") -- which is frequently the case with the negative present imperatives (e.g. "stop judging").

Here's a possibility...
It was expected that the LORD would pour out his Spirit on the land and his people at the renewal of all things (Isaiah 32:15; 44:3; Ezek. 39:29; Joel 2:28-32). According to John the Baptist, in all four gospels, the more powerful coming One (Son of God in John 1:34) would be the one who would baptize with the Holy Spirit. In the book of Acts, on the day of Pentecost, Peter explains the miracle of the languages by saying that Jesus was "exhalted to the right hand of God, [and] he has received from the Father the promised Holy Spirit and has poured out what you now see and hear" (2:33). So, apparently the Father gave the Son the authority to send his Spirit.
Jesus referred to himself as the Son of Man, not only in the synoptic gospels, but even in John (3:13,14). "Son of Man" would have linked back with I Enoch and Daniel. Daniel 7:13,14—
"In my vision at night I looked, and there before me was one like a son of man, coming with the clouds of heaven. He approached the Ancient of Days and was led into his presence. He was given authority, glory and sovereign power; all peoples, nations and men of every language worshiped him. His dominion is an everlasting dominion that will not pass away, and his kingdom is one that will never be destroyed.
In Matthew 28:18, when he met with the disciples, Jesus declared he had all authority.
I suggest that between Mary's encounter with Jesus in John 20:17 (when Jesus said he had not yet returned to the Father) and his meeting with the disciples in 20:19 (when he breathed the Holy Spirit on them), the event mentioned in Daniel occurred. Jesus did not want to be detained from returning to the Father and receiving authority, glory, and sovereign power, and would thus be in a position to give the Holy Spirit as he willed.

So Mary, once she turned towards Jesus, recognised him. So he was in his normal body. But he did not want her to touch that body until he had ascended to 'the father'. Then having told Mary to go to his brothers and tell them about his ascension he then intercepted her again before she reached them!
8 So, quickly leaving the memorial tomb, with fear and great joy, they ran to report to his disciples.
9 And, look! Jesus met them and said: Good day! They approached and caught him by his feet and did obeisance to him.
10 Then Jesus said to them: Have no fear! Go, report to my brothers, that they may go off into Galilee; and there they will see me (Matthew 28).
This time Jesus did not mind that they caught him by his feet. So why the change of heart and why did he intercept them before they could do what he had asked them to do?
8 So when they came out they fled from the memorial tomb, for trembling and strong emotion were gripping them. And they told nobody anything, for they were in fear (Mark 16).
Jesus knew that these women were terrified and that they need to touch him and be consoled, but he could not permit it until after he had ascended. But as soon as he had done this he returned to them to permit them to touch him and believe and be comforted, such was his love for them. So this body, which he had promised to raise up, would have been defiled had it been touched by these faithful women!
Well, there are a few more detail but this should do for now.

This is just my opinion and I have not seen it mentioned before ...
but perhaps Jesus did not want to be touched after his resurrection since it was not a real, physical body. It may have been a temporary type of body that he used for demonstration purposes and may have needed a break-in period before being used.
Or possibly the body had been recently painted and it needed time to propery dry.

Sosteros,Where is this taught in scripture? Jesus was fully human at the time, flesh and bone. (Where there is bone there is blood as well) Furthermore Jesus did not ascend then and would not ascend for some forty more days. And we know that Jesus had nothing against women and supported them even if they were Samaritan. But it did have something to do with the Law which would not end until this sacrifice was accepted. And it did have something to do with Mary at the time and not other women. And this restriction would not be permanent but would somehow be quickly resolved. So we have this much to work with.
So by holding him in place, Mary would halt his motion that concludes with his ascension to heaven.

Would a man that could walk on water and whip money changers have trouble with Mary? Especially a man that had no intention of leaving for over a month? Would it not make more sense to think that Jesus was extending a kindness to Mary by preventing her from breaking the Law? The problem was that He had not yet ascended to His Father which means the Law was still in force. There were Laws about dead people and how they were to be handled. And Jesus was dead for over two days. Such Laws would have to be satisfied first before this legal restriction could be removed. It does not matter how this was done. It could be as simple as verification by more than one witness. What we do know is: Nu 9:6 And there were certain men, who were defiled by the dead body of a man, that they could not keep the passover on that day: and they came before Moses and before Aaron on that day: There are many verses like this with several possible answers that would account for this comment.
