    I still have normal heart rhythm - there's like a 50% chance that it will go back to atrial fibrillation. So I am going to be really careful. First thing to go - caffeine. I like a good cup of coffee, it's very soothing, but mostly I use decaf. It's going to be always now.

    what's your favorite healthy breakfast? Lately I have been eating non-fat yogurt with 1 ounce of pistachios and a couple of dates. I used to loathe yogurt but I'm pretty accustomed to it now.

    I realized I couldn't watch Paula Dean in good conscience when she made bread pudding from Krispy Kreme donuts and sweetened condensed milk, then covered it all in sugary rum sauce!

    Bread pudding made with donuts - I could not even envision such a thing without Paula Dean - it is as if someone is hell-bent on cardiac arrest and/or diabetes! And yet, there is probably some poor, snaggle-toothed fool in Dixie who will give it a try. Yup, food-porn.

    As an alternative, tonight for dinner, Mr. Bee and I had green salad, multi-grain bread, whole-wheat pasta tossed with chopped fresh tomatoes, fresh basil, garlic, olive oil, parmesan, accompanied by a frisky little syrah. Our weekly veg nite - no meat. We love it!

    I miss some of the good stuff I used to eat; on the other hand I definitely don't want diabetes or high blood pressure. I couldn't have had my cardioversion procedure if I hadn't lost a lot of weight. The more you weigh, the more dangerous anesthesia is. I just had two apples and some low fat cheese for my supper.

    In the morning, I often chop up fresh fruit - strawberries, blueberries, pears, grapes, bananas, nectarines -- to fill a medium bowl. Mr Bee will eat a large bowl of this and he is satisfied (240 pounds, 6"5"). For me, I make a bowl of oats and skim milk, microwave a minute or two, then add scoops of the fruit mixture plus ground flax seed. Very filling.

    Occasionally, like this morning, I sauteed/softened chopped red peppers and green pasilla chiles, and tiny broccoli florets in WATER in a frying pan. Then I poured in two eggs beaten with a couple TBSP skim milk. (Next time I would grease the pan a bit.) Add one slice of whole-grain raisin toast, very lightly buttered, This is a week-end treat.

    you know there seem to be a lot of JWDers in the Ventura area. I would love to have some time off and go over there for some beach time and some time with JWDers. If I ever get a day off, I'll let you know.

    My god. I think I gained 10 pounds just reading this. I love bread pudding, but from Krispy Kreme Donuts?? Good god......

    Here's a wonderful, healthy recipe for bread pudding......I prefer it without the chocolate chips and pecans, which would make it even lower in fat:

    Banana Bread Pudding with Chocolate Chips & Pecans

    Per serving: 337 calories, 10 g total fat (2.9 g saturated fat), 10 g protein, 55 g carbohydrate, 3.9 g fiber, 77 mg cholesterol, 225 mg sodium

    Ingredients:

    • 12 slices multigrain bread (about 1 lb / 454 g)
    • 2 cups 2% milk
    • 2 cups mashed ripe bananas
    • 1 cup low-fat vanilla yogurt
    • 4 x omega-3 eggs
    • 3/4 cups packed brown sugar
    • 1 tsp each of vanilla and ground cinnamon
    • 3/4 cup semi-sweet chocolate chips
    • 2/3 cup chopped pecans
    Directions:

    You're Pudding Me On

    1. Break bread into 1-inch pieces and place in a 9 x 13-inch glass baking dish that has been sprayed with cooking spray. Dish should be full.
    2. In a large bowl, whisk together milk, bananas, yogurt, eggs, brown sugar, vanilla, and cinnamon. Pour mixture over bread. Using your hands (yeah, it’s a little messy), mix bread cubes with milk mixture so that all pieces are coated. Let stand for 15 minutes while you preheat oven to 350ºF.
    3. Just before popping dish into oven, mix in most of the chocolate chips and pecans, saving a little of each to sprinkle on top. Now, go ahead and sprinkle them on top!
    4. Bake for 50 to 55 minutes, until pudding is puffed up and golden brown and center is set. Remove from oven and let stand for 10 minutes before serving. You can cut the dessert into squares and serve it on a plate or spoon it into dessert bowls. If you feel like splurging, serve the sliced version with a small scoop of vanilla ice cream or frozen yogurt, and the spooned version with a drizzle of real whipping cream.
