    Yes, Paula Dean has done some appalling things. and she's kind of tacky sometimes. I can't stand to watch her show for more than a few minutes. thanks for the recipe for bread pudding. I hardly ever bake any more but sometimes a little treat is a good thing. Here is a delicious cake recipe:

    Preheat oven to 350 degrees F. Spray a 9X13 baking dish with Pam or something similar. Mix together 3 cups unbleached flour, 2 cups sugar, 1/3 cup cocoa powder, 2 teaspoons baking soda, 1 teaspoon salt. Stir until well mixed and then sift into mixing bowl.

    combine 1 scant cup walnut oil (very healthy like olive oil but better flavor), 1 cup water, 2 tablespoons apple cider vinegar and 2 teaspoons vanilla.

    Combine wet ingredients with dry, stir quickly until well mixed, pour immediately into the baking dish and put in the oven. Bake about 45 minutes to an hour, test with a small knife in the center to see if it is done.

    Its flavor improves if you let it sit until the next day. The thing about this cake is that it is rich and tastes good, has really healthy oil, no dairy. However, it is a lot of sugar and flour so you have to make sure you eat small portions. It keeps really well for about a week if covered tightly and kept in the refrigerator.

    And here is one of my current favorite meals - I boil a large beet for about 45 minutes until tender. Rinse under running water and rub skin off the beet. Slice the beet into a bowl, pour over Newman's Own Light Balsamic Vinaigrette and then crumble on an ounce of goat cheese. You just won't believe how good this tastes.

    Another favorite salad - dice about 4 cups of tomatoes (I use the little ones and cut them in half.) Add a tablespoon each olive oil and balsamic vinegar. Add one smashed or minced garlic clove and one teaspoon sugar, one half teaspoon salt. Then cut mozzarella cheese into cubes, about an ounce per person and mix into the tomatoes. Julienne a bunch of basil leaves, as much as you like, and stir into the tomatoes and cheese. Toss, refrigerate for about half an hour. You want it nice and juicy. Serve with sourdough bread toasted really dark, to dip into the tomato juice and scoop up tomatoes and cheese.

    Another great trick to cutting back on fat is to substitute butter (or part of it) with applesauce. I kid you not. I do that in my banana bread and you can't even tell the difference.

    Good idea - I'll try it. I tried a muffin recipe and substituted mashed bananas for almost all the oil. It tasted great and had an interesting texture. Someone expecting a cake-like muffin might not like it. Also it froze really well and reheated in the microwave really well.

    My mom, who is still a JW and just turned 60 today, has a lot of problems with a-fib. The problem with trying to treat it is that she self converts. Her symptoms are intermittent, so it's like chasing a ghost. She's probably going to have the more involved procedure, cardiac ablation to correct the problem. She's scared. I'm just glad that I moved down here before she really started having problems with this. She's going to have to go up to St. Petersburg, about 2 hours away, to have the procedure.

    I'm glad that your rhythm is back to normal. I know it's a day to day guess as to wether mom will feel up to going to work or not. Her doc says that sleep apnea is closely connected to atrial fibrilation, so she's going for a sleep study pretty soon too.

    wow! your poor mom! yes, a-fib can be exhausting. I'm hoping I'll get more energy, although I actually have a lot of energy. My doctor said the cardioversion and the ablation are both pretty safe. I had the cardiac catheter and that was easy, too. I hope your mother can relax a little about the procedure. Too bad she isn't here - a little shoulder rub or back massage might help her relax.

    I also have arrhythmias and fibrillations and experienced a significant health improvement by being treated with acupuncture. Give it a shot.

    I agree about acupuncture, I have seen some really interesting stuff happen with acupuncture. But it didn't help my a-fib, unfortunately. Would have been a lot less expensive to have acupuncture!
