I suspected that it had something to do with Fromage de tête, is it a reminder of the French era in Alabama ? It was really the poor man's meat, requiring imagination to use up the left-overs of the animal. I like so much the crunch of tendron under the teeth, a bit like pig's foot, pied de porc (french saying : dans le cochon, tout est bon).

The stuff has a different, but not strong flavor. I would enjoy it, but I don't like the texture of it.
