I would love to try it. I am fairly adventursome with new things. I love menudo, liverwurst, caviar, raw oysters, pigs feet, all kinds of sushi. I think the term Head Cheese turns off most people. It's basically no different than potted meat or spam, etc.

I disagree on it being the name. I've tried all of the goodies Gregor mentioned, other than the pig feet. Plus I gave scrapple a try twice. It's all nasty for one reason or another. Add Escargot to that list as well. The caviar was ok, but easy to live without. I don't eat spam or bologna either.
Menudo would be awesome without the tripe. I prefer Pozole.

Yes, I suppose that potted meat is similar, also like Tête de veau (veal's head). The latter (they say tête de veau Ravigote, Former french president Jacques Chirac's favorite dish) and fromage de tête can be served with vinaigrette and shallot, either warm or cold. Don't know about potted meat.
