OK, I cheated on the taco salad. Southwest salsa garden salad in a sack, a pound of hamburger browned, toss on one of those packets of taco seasoning, put on salad, top with cheese, sour cream, avacado, black olives (two things my wife can not get enough of: black olives and salmon). For a healthy, fast mideweek dinner its pretty good. Similar things can be done with chicken and either the asian or ceasar salads.
Beks, for the fourth I like baked beans anytime I'm grilling.

Maybe you would like a Chickpea Salad?
1 can chickpeas, drained
1/2 small onion, diced
1 cup chopped cilantro
2 tsp lemon juice
1/4 cup grapeseed oil (or olive oil)
salt and pepper
Easy to make, and it's nice with BBQ'ing stuff.

Jeffrey!! That is cheating.
Actually, I'm thinking about doing taco salad tonight. I just plucked the last lettuce in my garden. Here's my recipe for what it's worth. I use ground turkey, I try to save beef for once a week, and then it's gonna be steak!
Anyway, cook up your ground turkey with onion, garlic, chili powder, cumin, dash of oregano, salt.
Then your basic lettuces, tomatoes, peppers of all kinds including plenty JALAPENO, green onion, cilantro, avocado, lite cheese, lite sour cream, hot sauce. Sometimes I get some of those tortilla strips for the top. I personally would love to put black olives on, but honey bunny doesn't like them so I rarely get them. Oh sometimes I throw a handful of beans on there. Kidneys or black.
I love the baked beans Jeff, but only if I made them from scratch, and that ain't gonna happen. Palm, the Chickpeas sound good. Makes me think of a 3 bean salad, which just might work.
I'm considering just making a big pot of chili and some cornbread, and telling the boys my job is done.

How would you grill corn on the cob please? That sounds a little impossible???

Loz, when you say grill, what type of cooking contraption do you have in mind? Maybe when we say grill, we are not talking about the same process.

Oh - the greens look good, Sylvia. I love 'em and if I had some they would go with my meal.

Having said that, thanks for the chickpea salad recipe, palmtree67. I've got some chickpeas and was wondering what to do with them, so I'll give that a try tomorrow!!!

Beks, tomorrow I will make a pot of Great Northern Beans soup in my crockpot. We'll have that with turnip greens and cornbread for supper. I plan to take the leftover bean soup and put it in a pan, add molasses and pork, and bake it in the oven. Voila, baked beans for the 4th. It doesn't have to be a pain to make baked beans, especially if you start with really good, flavorful soup.
For tonight, we're going simple. I stopped at a farm stand and bought cucumbers and tomatoes. We're having hamburgers (cooking now) and cucumber tomato salad. End with angel food cake with peaches. Mmm, mmmm!
Re: the red white and blue, I always enjoy making a little yogurt parfait with vanilla yogurt, blueberries, and cherries. Sprinkle some nuts on top. But we're yogurt crazy around here and eat it everyday.
