Dinner at the Proper Time

    Jeff, that leftover roast meal sounds great! I never know what to do by the third night. We always have hot roast sandwiches with homemade fries on the second night. But we cut the roast up into small pieces and cook it right in the gravy, then pour it over bread and fries.

    Also, when we have burritos, we usually have a lot of burrito mix left over - hamburger, spices, refried beans, etc. On day two, we'll take that and make homemade fries supreme. Putting sour cream and fresh tomatoes/green onions on top makes a great lunch.

    Last night my wife and I split a 12 ounce sirloin steak, we had mixed vegetables and a salad.

    Jag I've been wanting steak lately. I try hard to keep beef to once a week, and I've been saving my beef for the 4th of July.

    I'm pretty sure it's gonna be the Chili and Corn Muffins with Salad route. I decided this morning on Cherry Pie.

    I'm laughing, and I'm not really sure why. What do non-Canadians call fries and/or gravy?

    Friends just called and want to come for dinner this weekend, requesting I make this:

    THAI COCONUT MUSSELS

    1 pound of mussels per person

    Sauce: Saute 1 and half cups of chopped onion and lots of diced garlic in 1/4 cup butter. Add 1 can coconut milk. Season with lots of curry,

    turmeric, pepper. Throw in some Korean chili-garlic sauce. Simmer. Before serving, add 1 cup shredded coconut and a handful of chopped

    cilantro.

    Pour over steamed mussels. Serve with garlic bread and a salad.

    Yummy!

    Oh Palm - that sounds awesome. I'm going to try this one after the weekend. Hubbie loves mussels. I do too, as long as they're not undercooked.
