Cored beef is amazing! I bought a propane smoker last year and want to try smoking a corned beef brisket.
A little advise to all you fish haters out there:
If you don't care for fish that’s fine, but If you're going to try it DO NOT, I repeat DO NOT, try freshwater or warm water fish; it's mushy and tastes like a big helping of mud. Also don't ever buy farmed fish or fish from the super market, go to a good reputable fish market and make them PROVE it's wild and fresh; part of why people don't like fish/shellfish is because it starts spoiling immediately and is easily mishandled.
I live near the Washington State coast and have fished in cold saltwater all my life, so yes there is a BIG difference between water types and temperatures along with how it is handled and preserved when caught.

Slainte to that! A nice robust stout (Guinness is too light-bodied, IMO). I work as a brand ambassador for the Diageo line of whiskeys. I was just presented last week with a limited edition bottling from Bushmills. A 20yo single malt, rum-cask aged beauty. Number 33 of 1,000. Think I'll have some of that with my corned beef tonight.

If you can get Deschutes Brewery beer where you live, their Obsidian Stout is great.
Rogue Brewery's Chocolate Stout is incredible. Nice bitter chocolate flavor with none of the sweetness.
Even the Guinness Foreign Extra Stout is far superior to their regular stuff, but it can be hard to find. Trader Joe's might have it, though.
Samuel Smith's Oatmeal Stout is another fine choice, and is likely a little easier to find.
Oatis Oatmeal Stout by Ninkasi Brewery is great too, but again, finding it might be tricky.
Access to many great brews is just one of many benefits to life in the Pac NW.
