I remember the scare about cochineal colouring and ice cream as well. This was in Scotland in the 70s.
Old time JW's did some very devout JW's refuse to eat pizza with pepperroni because they believed "blood" was in the pepperroni?

I too recall the 'blood' in ice cream rumour, ambers.
In the mid 60's there was a rumour in JW land that 'Harris' sausages contained blood & 'Hayes' cakes.....(UK brands)
Any thing red/pink was suspect because it contained 'beetles blood'........ie cochineal.
However tasty pink shrimps & prawns were OK despite the fact they hadn't had their throats cut & the blood poured out.

Here in the U.K. in the 1960's I remember WALLS sausages and ice cream were blacklisted many JW's because they both contained blood.

I remember being told the pink French Fancies had insect blood (Cochineal) inand I shouldn't eat them!
Cochineal is indeed from insects (funnily enough, Cochineal beetles). But it's not blood. (A lot of Cochineal colouring is now synthesised.)
Insects don't actually have blood because they respirate quite differently to most other animals, and the equivalent whiteish goo that they do have isn't red.

When I went shopping with my Mum, my little job was to check the packets for additive E120. This was cochineal. We even once rooted through our cupboards at home to make sure we didn't have anything with E120 in.

Thankfully, those "fillers" are just BLOOD FRACTIONS, so no worry about eating any of that stuff today.
