Mmmmmm bread machines

    Okay...........that made me smile, Lee.

    Rachel gave me a recipe with my first bread machine, a gift from my kids. It's really good and is called "Marilyn's Health Bread". That is it's real name. When I get a chance I will post the recipe. It's a hearty wheat bread, very dense and delicious.

    I am about to leave for the weekend, but will do it when I return.

    Can anyone tell me how easy it is to get the ingredients and how to get healthy ingredients like whole grain? Also someone mentioned leaving it on at night to be ready for breakfast - there's no risk of it burning or anything then?

    Crumpet, try Allinsons Very Strong flour. Cheap flour produces horrible tasting bread. Super markets own brands are not to be recommended. Set your machine so that the bread is ready as soon as you awaken and remove it from the machine as soon as you possibly can, that way it will be much firmer and not at all soggy. If you leave it in the bread maker for too long after it's baked it won't be as nice.

    I'll do it for you then. It's the only one I make and I keep it safe in my head.

    1 1/4 cup water
    1 1/2 teaspoon salt
    1/2 cup grains ( I use multi grain hot cereal, oatmeal, whatever I have or omit it if I don't have any on hand)
    2 cups whole wheat flour
    1 cup all purpose flour
    1 1/2 tablespoon butter (or olive oil)
    1 1/2 teaspoon yeast
    3 tablespoons sugar

    I add about 4-5 tablespoons of ground flaxseed meal for extra fiber and omega3's, cuz I'm a bit of a fanatic. You can't taste it and it adds such a nutrtitional punch that I can't resist. Bob's Red Mill is a great brand and they have it at Trader Joes.

    I've made a mental note not to move to Arkansas where the whole wheat flour is full of critters.

    Just got my new bread machine two weeks ago! New for me, but got it off Craigslist.org!
    It had only 3 or 4 loaves on its engine said the previous owner, a young mother trying out the low carb diet.
    Wow!!!! I mainly make whole wheat bran bread. Tried to make sourdough, but its a bit of work, having to make "the mother" first, then wait hours, then frig it, then use it. Made sourdough olive oil rosemary bread!
    So easy! I have found this Sunbeam bread maker to be the easiest I have ever used. FOOL PROOF!

    Basic Recipe (takes about 5 minutes to throw ingredients in the maker and turn it on)
    3 1/2 cups flour (any flour)
    1 cup water, (sometimes a little more)
    a little oil
    a little sugar, more for sweet loaf
    a pinch of salt
    tbl sp. active yeast

    bran, raisins, chopped figs, cake mix, all spice
    fresh rosemary from the garden, garlic powder, all seasoning salt, pepper

    You cant go wrong!!!

    Last night we made a dessert bread for this morning: water, oil, brown sugar, no salt, whole wheat flour
    yeast and ginger spice cake mix!

    It made a little dense loaf so moist and sliceable like pound cake!!!

    I'm having a toasted slice right now with my coffee.......hmmmmmmm yummmmmy!!

    I paid only $25 for this wonderful machine!!!

    Our landlord pays the electricity here, so now we dont have to heat our gas oven to make bread!

    I must add that I see my recipe is completely inaccurate....
    but that is the beauty of my machine (and maybe my cuisine taste)
    It all tastes good to me!

    For onion bread I recommend dry onion flakes with a white loaf recipe, some garlic powder, salt and pepper.

    For the rosemary bread I picked the rosemary from our garden and minced it very fine and put it fresh into the maker along with lots of garlic powder and italian herbs and a salt blend.
    I could have sold that loaf!! My house smelled just like an italian restaurant!!!!


    My first bread maker I bought 16 years ago. Bread used to stick in it or it would wobble off the counter. Or the paddle would come off and be lost in the loaf!!!
    This sunbeam is huge, good looking and quiet and the loaf NEVER STICKS. They must have improved the loaf pan coating or something.

    Thanks for starting this thread! Bread making with a bread maker is part of my daily life.

    As soon as I get my new wheelchair I'm going to go to Bulk Barn and buy all kinds of wonderful flours and have lots os fun.

    I have whole wheat flour and actually tried that but used the cold milk so it came out preety heavy. Now I want to try it again - the right way.

    LadyLee, here is a recipe I adjusted for my bread machine.... I usually used the machine only for the "work" and made regular loaves in the oven cuz I didn't like the square thing that came out of the machine!

    I used my machine for all sorts of kneeding projects including potsticker wrapper dough, and pasta dough.

    This recipe is really tasty "white bread" with an already buttery flavor.

    Light Bread for the Bread Machine

    (Modified from Better Homes and Gardens Light Bread recipe, January 1997 issue)

    1/4 C sugar

    1/4 C butter or shortening (I use 1/2 cube butter)

    1 tsp salt

    1/2 C warm milk (110 to 115 degrees)

    1 beaten egg

    1/2 C warm water (110 to 115 degrees)

    1 Pkg active dry yeast, or

    2-1/4 tsp active dry yeast for bread machines (from the jar) (best)

    3-1/4 C all-purpose flour

    Ignore the normal ingredient layering the bread machine instructions recommend and follow these instructions:

    Place sugar, shortening or butter, and salt in a small (1qt) bowl. Zap in microwave until shortening or butter is slightly melted (approx. 30 sec. for butter, 1 min. for shortening). Add warm milk and stir. Butter may remain lumpy, but softened. Set aside to cool.

    In a small bowel (1 cup) stir together warm water and yeast; let stand 5 min.

    Beat 1 egg into milk mixture. Add yeast mixture, and stir.

    Pour this liquid mixture into the bottom of the bread machine’s bread pan.

    Add 3-1/4 cups flour to bread machine.

    Process on yeast bread dough setting- approximately 3 hours.

    Turn out onto lightly floured board, and punch down. Roll into loaf and place in greased bread pan. I use a larger pan, 5-1/2” by 9”, which creates a really nice large loaf. The dough can be divided into 2 smaller loafs.

    Allow to rise in a warm draft-free place until double in size. Preheat oven to 375 ° .

    Bake 375 ° for 20 to 25 minutes. Until browned and the bread sounds hollow when thumped.

    For rolls use the shorter dough setting (1 hour) on the bread machine. Shorten baking time to 15 to 20 minutes.
