In a recipe for cinnamon raisin bread it calls for 1/4 c raisins.
Can I add more - like 1 c without ruining the bread?
Whenever I've made cinnamon raisin bread in the bread machine, I didn't really like how it turned out. The raisins got all chopped up by the kneading paddle and the bread didn't look as nice.
What works best for me is to make the dough on manual setting, then roll it out to about ½" thick. I make a "paste" with soft butter, cinnamon, and sugar, which I spread on the surface of the rolled out dough, and then sprinkle as many raisins as I like on top (you can also chop up an apple and add it in at this stage). Then roll it up again (like for cinnamon buns) and place in a loaf pan. Let it rise for 30 minutes and then into the oven to bake. Or, you can slice it into cinnamon rolls and place cut side up in a 8 x 8 pan, let rise for 30 minutes and then bake.
There is nothing in the world like home made bread. Yum!
Funny story:
For almost 6 years now I've realized I'm gluten-intolerant. (My body cannot process gluten, the protein found in some grains including wheat, barley, rye, and oats.) I get terrible reactions, but that's another story. So the breads, pastas, pastries, etc. that I eat are always gluten-free. Usually they're made of soy, bean, rice, or some other flour. Rarely do you find those breads made in the store, so you have to make it home made. Since I'm not much of a baker, I just go without and find other things to eat. No biggie - I'm used to it now.
My husband has a bunch of friends that gets together once a month. One wife loves to make home made bread. So she always brings something special to the meal. Home made focaccia with olives, garlic and sundried tomatoes. Or cranberry almond bread. Or onion and garlic bread. They are always the hit of the meal! Of course, since I'm gluten-intolerant I don't eat it, although much drooling and longing is done.
After two years of this, she finally got tired of feeling sorry for me and ventured out to make a gluten-free loaf. So a few months ago she brings it to me for the meal. You could tell she was so proud! And I was so touched that she'd go out of her way to make something just for me to eat. What a doll! It was an herb loaf with fresh rosemary and basil from her garden. It was the worst taking lump of brick I've ever had. Blech. But being the person I am, I could not bear telling her as she was so obviously proud of having made it. So I told her it was lovely and really enjoyed it. BIG mistake. Every month now, she brings me the same nasty lump of brick bread. Egads - what have I done? I'm still trying to figure out how to tell her to STOP. LOL!

You people are making me think about making something other than my usual whole grain bread. Must...stop...reading...thread....
My breadmaker suggests adding the raisins AFTER the dough cycle. No chopped raisins.

Along with the regular whole wheat recipe I add a half cup of wheat bran. Wow!!! No food has a chance of sticking on me...it all goes through too fast thanks to the bran!
I used to be wheat intolerant too. I gave up milk, bread and so many other foods. I had severe pain in my hips and back and along with the intolerance thought I was going down hill fast.
After my divorce my health changed again and I was able to add back foods I gave up! Now I enjoy all the breads and milk products without pain and embarrassing repercussions.
About a month ago our neighbor nearby brought home a pig....yes to fatten up and slaughter probably around the holidays. He did the same last year and it was very unpleasant to be near the situation and feel so helpless. The little pig squealed and cried terrified the day he was trucked into the yard and placed in his lonely little pen far down by the river.
That day I could not put a bite of meat down my throat....and have not been able to since. It has been a month now. So this bread maker has become even more valuable to me. Along with the yogurt I am making on the warm spot on the stove, these are my staples. We have an apple tree and some zucchini left in the garden.
Jeeesh, maybe I'll start making my own soap!!!

I'm not actually wheat intolerant, but gluten-intolerant. It's something I'm just going to have to live with...it's a disease called Celiac. I wish it were a simple allergy that I could take a pill or just phase out of my diet and come back to later. Unfortunately, many Celiac patients have serious health issues from malnourishment if they don't cut the gluten...I don't want to take the risk.

Lee, I think this is the problem. When I asked her about her recipe, she said she just substituted gluten-free flour for the regular flour. But you can't make gluten-free breads like that. There are other ingredients necessary to make it taste good. So what she really needs is a gluten-free recipe, not just gluten-free flour.
I think if I had more time on my hands I really would venture out and make some myself. She just truly seems so happy to do it, I just don't want to hurt her feelings. I was thinking maybe I could say something like, "I've heard this recipe is really good. It has some strange ingredients in it, but if I got those for you, would you be willing to try a new recipe for me?" Might this work? Outside of making my own bread of course.
