    You're right you can't just use a different flour. You need to add xanthan gum. These breads are a little more work intensive. But if she is just adapting a regular recipe I can see why she is having trouble and passing it on to you.

    Here is one of the recipes for


    Basic Rice Bread

    • 1 c. fresh gluten-free buttermilk (room temp)
    • 1/2 c butter, melted
    • 1 tsp rice vinegar
    • 1 1/2 tsp salt
    • 2 c brown rice flour
    • 1/2 c potato starch flour
    • 1/2 c sugar
    • 1 1/2 tsp xanthan gum
    • 3 eggs
    • 1/2 c water
    • 1 1/2 tbsp active dry yeast
    1. Place the buttermilk, melted butter, rice vinegar, and salt in bread pan. Stir with a rubber spatula.
    2. In a large bowl, combine all the dry ingredients, except the yeast. Mix well with a whisk.
    3. In a separate bowl, combine the eggs and water; beat lightly.
    4. Place 1/2 of the dry ingredients in the bread pan. Add the egg mixture. Add the remainder of the dry ingredients; sprinkle the yeast on top. Select LIGHT CRUST setting and press START.
    5. Observe the dough frequently during the kneading cycles. If it does not appear to be mixing well, use a rubber spatula to assist it occasionally.
    6. After the baking cycle ends, remove from bread pan, place on a wire rack, and allow to cool 1 hour before slicing.

    VARIATIONS:

    • You can substitute olive oil for the butter
    • Replace 1/4 - 1/2 of the rice flour with another gluten-free flour, such as yellow or blue corn flour, polenta meal or soy flour.
    • You can add at least 1/4 c grated Cheddar cheese for a new flavor
    • Saute some onions in the melted butter, allow them to cool, then add them and your favorite herbs to create an onion/herb bread.

    Bread maker settings

    • CRUST: Light
    • OPTIONAL BAKE CYCLE: Sweet Bread/Rapid Bake


    The following recipe is less labor intensive

    CHEDDAR CHEESE BREAD

    • 2 1/4 tsp active dry yeast
    • 1 c brown rice flour
    • 2 c white rice flour
    • 3 1/2 tsp xanthan gum
    • 2 tbsp sugar
    • 1 tsp salt
    • 1 1/2 c (6 oz) grated extra-sharp Cheddar Cheese
    • 1/4 c non-fat dry milk powder
    • 2 tbsp butter or margarine, softened
    • 2 large eggs, well beaten
    • 1 3/4 warm water
    1. Place all ingredients, except the warm water, in bread pan, select LIGHT CRUST setting, and press START. While the machine is kneading, gradually pour in the water. If the dough does not mix well, use a rubber spatula to assist it occasionally.
    2. After the baking cycle ends, remove from bread pan, place on a wire rack, and allow to cool 1 hour before slicing

    Bread maker settings

    • OPTIONAL BAKE CYCLE: Sweet Bread/Rapid Bake

    Found one more: This one is really easy

    Brown and white bread

    • 2 1/4 tsp active dry yeast

    • 2 c white rice flour
    • 3 1/2 tsp xanthan gum
    • 1/4 c plus 2 tsps sugar
    • 1 1/2 tsp salt
    • 1 1/3 c nonfat dry milk powder
    • 1/4 c butter or margarine, melted
    • 2 large eggs, well beaten
    • 1 3/4 c warm water

    I think if I had more time on my hands I really would venture out and make some myself.

    That last recipe would take five minutes to put together. and another couple of minutes to give a look and stir

    Lady Lee,

    Oh goodness! Thank you so much for posting those - you are a DEAR!!! And that last recipe does look like an easy one. I realize this may sound like a dumb question, but how do you make that recipe in a gas oven? I don't have a bread machine,so I'll have to do it the old fashioned way. Does it give any details?

    OMG I think I have just had the best French Toast I have ever had.

    I used the rapid bake basic white bread recipe that I made last night. Then sliced it about 1/2 inch thick and made french toast

    It never tasted like this with store bought bread

    I finally located my two favorite recipes. I'm old fashioned, I like my bread white and fluffy and sliceable, just like hubby's mama used to make. My daugher doesn't get it, she figures at my age I should be more concerned about my health. HA! Life's too short.

    Janet's Challah Breadmaker Recipe

    Add the following in the order specified in your machine's instructions, bottom to top:

    · 1 1/2 t yeast

    · 2 T oatmeal

    · 1 t salt

    · 2 cups flour

    · 2-1/2 T oil

    · 1 egg

    · 1 1/2 T sugar

    · 3/4 cup warm water

    The oatmeal slows down the zeal of this fluffy bread JUST ENOUGH to so it doesn't overpower my breadmaker. You can either let the machine complete the cycle, and wind up with a regular looking loaf, or take out the dough after the first rising, shape it, and let it rise in a pan, then bake it in the oven.

    This one's got a little zip, a nice departure from plain white. Besides, you can pre-measure ahead of time so you can make it at your liesure.

    White Ranch Bread Mix

    2 1/4 cups Flour

    4 Tablespoons Dry Milk

    1 1/2 tablespoons Sugar

    1 tablespoon Powdered Ranch Dressing Mix

    2 Tablespoons cream of wheat cereal

    1/8 teaspoon Spike

    1 1/2 teaspoons Active Dry Yeast

    Place ranch dressing mix into a small zip baggie and set aside. Do the same with yeast, or set aside a prepackaged envelope of yeast. Mix and place the remaining ingredients into a quart sized jar. Lay baggies of dressing mix and yeast on top of mix and apply lid. To make the bread later, you will need the following additional ingredients:

    3/4 cup Water 1 Egg, beaten 2 1/2 Tablespoons Vegetable Oil

    Place all ingredients into bread pan, wet ingredients first, then dry, yeast last on top. Insert the bread pan into the bread maker, and select "White", desired color, rapid or normal baking cycle and loaf size. Press Start.
