    Tonight I had Teriyaki Snapper. ( I told my husband we were having snapper, and he gave me this secret 'you are so naive' smirk. I had no idea what was so funny. Naughty, naughty mind)

    Anyway...

    4 snapper fillets

    1/2 cup soy sauce

    2 tsp ginger

    1/2 tsp asian sesame oil

    1/4 cup sherry

    1 tsp worcestershire

    2 tbsp chopped green onion

    2 chopped up garlic cloves

    Heat up all the ingredients in a frying pan, besides the snapper (or fish of your choice), then let it cool. Put the snapper in a coverable dish, pour marinade overtop, let soak for an hour, then put on a broil grill and broil for 5-8 minutes on each side.

    It was tasty. I had spinach salad with it. That pilaf rice above would have been good with it, if I'd had the ingredients.

    Tonight I made homemade pizza. Homemade crust, semi-homemade sauce (I used a can of tomato sauce as a base), mozzarella cheese. I took ground chuck and browned it, seasoned it with salt, pepper, onion power, and Italian seasoning.

    Hamburger and onion pizza is our favorite. Threw in some carrot sticks with ranch dressing, a pitcher of fresh, cool ice water, and we beat the heat.

    BTW, my town's water won best tasting tap water in the world this year.

    Ohhh that fish sounds good Tec, I'm thinking we'll do fish tonight if I get home in time to cook.

    Tuna salad (made with low-fat ranch dip, peppers, celery, green onions, diced apples, unsalted sunflower seeds) on whole wheat bread, corn on the cob, sliced tomatoes, carrot sticks, and semi-sweet grape koolaid.

    Hey, I'm doing penance for eating those forbidden ribs!

    It was good, Beks. Snapper was a really nice choice of fish.

    StAnn - I love hamburger on pizza. As a variation, for people who want less carbs, use a large, soft tortilla shell. Put on the ingredients. (Not being afraid to pile a little high). Bake in oven for 5-10 minutes, till cheese is melted. Then put it in the frying pan for another minute or two to make the shell nice and crisp.

    Its kind of like a pizza quesadilla, but without folding it over.

    I was just checking my pantry to make sure I have ingredients for a recipe I make every Friday and thought I should share the recipe with y'all. It's a vegetarian dish. I'll give you the crockpot recipe but you can also cook it on top of the stove in a dutch oven. I put it on in the morning, cook it on High, and serve it for lunch with mozzarella cheese sticks. Enjoy!

    Southwestern Bean Soup with Cornmeal Dumplings

    15 1/2 oz. can red kidney beans, rinsed and drained

    15 1/2 oz. can black beans, pinto beans, or Great Northern beans, rinsed and drained

    3 cups water

    14 1/2 oz. can Mexican-style stewed tomatoes

    10-oz. pkg. frozen whole-kernel corn, thawed

    1 cup sliced carrots

    1 cup chopped onions

    4-oz. can chopped green chilies

    1-2 tsp. chili powder

    2 cloves garlic, minced

    Dumplings:

    1/3 cup flour

    1/4 cup yellow cornmeal

    1 tsp. baking powder

    dash of salt

    dash of pepper

    1 egg white, beaten

    2 Tbsp. milk

    1 Tbsp. oil

    1. Combine all soup ingredients in slow cooker.

    2. Cover. Cook on Low 10-12 hours or High 4-5 hours.

    3. Make dumplings by mixing together flour, cornmeal, baking powder, salt, and pepper.

    4. Combine egg white, milk, and oil. Add to flour mixture. Stir with fork until just combined.

    5. At the end of the soup's cooking time, turn slow cooker to High. Drop dumpling mixture by rounded teaspoonfuls to make 8 mounds atop the soup.

    6. Cover. Cook for 30 minutes. (Do not lift lid.)

    Tammy and Syl, both the snapper and the tuna sound great. I wouldn't have thought to put the apples in the tuna salad. But soy sauce and canned tuna both have SOY in them and I'm allergic to soy. Any ideas, Tammy, of a good substitute for your Snapper recipe for the Soy Sauce?

    Syl, I might try your tuna salad recipe with chicken (soy-free!). I have some sunflower seeds and have been just eating them for a snack. They'd be better in tuna or chicken salad, me thinks.

    quesadilla --(whole wheat)

    one quesadilla on grill: top with fat free yogurt-peach or any fruit flavour, sliced onions (raw), shredded lo fat cheese, some sliced chicken, med salsa, place second quesadilla on top.. put the cover down for 4 mins and grill.. remove and top with fat free sour cream..

    High fibre, lo fat and yummy - serve with a side salad and a beer (lite of course)

    I found this for you StAnn, for people who are allergic to soy and want to make their own soy sauce:

    • 4 tablespoons beef bouillon
    • 4 teaspoons balsamic vinegar
    • 2 teaspoons dark molasses
    • 1/4 teaspoon ground ginger
    • 1 pinch white pepper
    • 1 pinch garlic powder
    • 1 1/2 cups water
    Directions
    1. In a saucepan over medium heat, stir together the beef bouillon, balsamic vinegar, molasses, ginger, white pepper, garlic powder and water. Boil gently until liquid is reduced to about 1 cup, about 15 minutes.

    It got some good reviews from people who'd tried it anyway.
